Daigaku Imo (Candied Sweet Potatoes) 4 servings
Sweet Potatoes: 2, small-size
Salt for salt water
Black, sesame seeds: 2 teaspoons
Sugar: 6 tablespoons
Mirin: 2 teaspoons
Soy sauce : 1 teaspoon
Water: 1 1/2 tablespoon
１．Cut sweet potatoes into bite-size pieces, and soak in salt water for 10 minutes.
２．Place sweet potatoes in room temperature oil in a frying pan, and turn on the heat.
３．Add syrup ingredients in another pot on medium temperature, and simmer until it becomes a little thick.
４．Fry sweet potatoes until cooked through and golden. Stir in sweet potatoes into the pot from #3, and sprinkle sesame seeds into the mixture.
５．Spread potatoes onto a cooking sheet to dry.
