Sweet potato Cheese Cake
Ingredients （ For a 15cm Cake）
・ 200g Sweet potato
・ 150g Cream Cheese
・ 2 Eggs
・ 180cc Milk or Soy Milk
・ 70g Sugar
・ 2 Tablespoons Cake Flour
・ 1 Tablespoon Lemon Juice
・ 30g Butter
１．Lightly oil the mold and cover it with cooking paper.
２．Slice the sweet potatoes, peel the skin, and put them in water.
３．Put the sweet potatoes in a pot and boil until you can easily stab them with a bamboo skewer. Transfer them to a colander and remove the water.
４．While they are still hot, use a strainer or a mixer on the potatoes until smooth.
５．Put the cream cheese in a bowl and heat it for about 40 seconds in the microwave to soften it. Use a whisk to smooth it.
６．Next mix in the sugar, and then the sweet potatoes. Mix well.
７．After mixing well, mix in the eggs one at a time. Finally, mix in the melted butter, lemon juice, milk, and cake flour.
８．Preheat the oven to 170℃. Pour the dough into the mold and cook at 170℃ for40 minutes.
９．After 40 minutes, check to see if it is finished by sticking a bamboo skewer in the center. If it comes out clean and not runny, it`s finished baking. If not, cook it for a bit longer.
１０．Your cheesecake is finished! It`s especially delicious when chilled.
